Island Pit Jerk Marinade
Jerk sauce comes from Jamaica and was developed by the Arawak and Caribe indians as a way of preserving meats using ocean salt, peppers and the fruit from the Pimento tree. This special recipe is a blend of tomatoes, Jamaican peppers, scallions, soy sauce, pimento, ginger, brown sugar, garlic, black pepper and spices. Marinates 12-15 lbs of poultry, shrimp, pork or lobster. Delicious!
